Is there no present way to wipe macOS entirely? I'm working on a fork for Talos Linux to boot and got it working, but once it installs, it wipes all partitions on the disk and renders the machine unbootable. Is there any way around this? Partition offets/etc?

you absolutely must not wipe the disk

wiping the disk on this platform is kinda similar to wiping the bios chip on a x86 machine, it will be rendered unbootable and you will need to use a separate machine to recover it.
