Cross compiling software is often times more challenging than building natively due to different errors in how build systems are used by all the different projects you might want.

nixos and gentoo have some infrastructure around crosscompiling stuff

You can start using e.g. Gentoo and only do cross-compiling and when something doesn't work fix that and contribute upstream. These days it's much better than it used to be, in the early OpenEmbedded there were tons of bugs everywhere.
