security - standard asahi installs are a bit worse as they do not ship with disk encryption or secure boot. You can set up both, encryption is pretty easy, secureboot is a pain but possible. "freedom" - also a bit worse as DFU restores requires a phone home, but aside from that - should be equivalent in practical terms.

you probably should, enabling filevault will make the recovery os require admin credentials before allowing to do anything

but the process is basically: somehow figure out if enabling secure boot in u-boot is possible, if it is - install m1n1 stage 2 as stage 1, if it is not - install kernel itself as m1n1 stage 1 payload.

naturally you lose the ability to update either m1n1 stage 2 or even the entire kernel w/o a trip via recovery os

yes, eventually m1n1 should have a feature to check signatures on stage 2, which would allow a sane implementation of secureboot, but we aren't there yet
